Erin and I love dumplings. When we lived in London an awesome little dim sum restaurant opened up a few minutes walk from our house. It’s one of the few things we really miss here in rural Northern Ireland! Now we just have to make our own.
We’ve been lucky enough to eat dumplings, steamed, boiled and fried in all sorts of lovely places – from Lijiang, Yunnan in South West China, to the streets of George Town, Penang and of course, delicious varenyky with Olia Hercules in the Ukraine.
Hopefully this is the first of several dumpling evenings at our small holding and farmhouse just outside Saintfield, County Down. We’re going to focus on some of the most popular, absolute classic steamed dim sum dumplings (har gow and sui mai) that we were taught to make in London. We are not dumpling experts, but we are dumpling lovers and we can’t wait to share some fabulous recipes from around the world with you.
We’ll start the evening with a small bowl of welcome dumplings and a tea or beer. We’ll then learn how to make three types of dumplings and fillings. We’ll make some with dough from scratch, and some with bought dumpling wrappers. Everyone will make their own dumplings and we’ll then sit down at the end of the evening to eat them all.
We’ll send you recipes for all the dumplings we cover so you can recreate your dumplings in the comfort of your own house!
Here are the details:
The dumplings: The welcome dumplings will be Sichuanese Wontons in Chilli Oil (made by us, eaten by you). We’ll then all make three dim sum style dumplings including Har gow (classic prawn dim sum with its delightfully translucent wrapper), Sui mai (pork & prawn). Vegetarian fillings will be available for all the dumplings.
The drinks: There will plentiful green tea & water all evening and a welcome beer if you fancy it. If you would like anything else to drink please feel free to bring your own; wine, beer, soft drinks or whatever you fancy.
