Three days of cooking up a storm for 60 people over New Year at the beautiful Belle Isle Castle on the shores of Lough Erne in Co.Fermanagh.
We kicked off the weekend (and the New Year’s Eve celebrations) with an Indian-inspired Feast. A spiced gin cocktail and canapes of Spiced Potato Samosas and Bhel Puri were served in the Drawing Room followed by a three course Indian feast in the Banqueting Hall.
We served Sausage Rolls (pork and fennel or mushroom and thyme) with homemade Tomato Ketchup to the hungry revellers after midnight.
We eased the guests into 2017 with a Middle Eastern Brunch, including Eggs Shakshuka, Grilled Halloumi and a smokey Baba Ganoush.
After a hike up nearby Benaughlin Mountain guests were welcomed back to Belle Isle with an Irish Afternoon Tea of a warming Butternut Squash and Apple Soup, Open Sandwiches, crumbly Shortbread and Tunisian Spiced Orange Cake.
We wrapped up on 1 January with an evening Soul Food Buffet of Corn Bread, Spicy Shrimp Jambalaya, Mac and Cheese and Sweet Iced Tea.
Finally, we waved the guests off on 2 January with Soda Farls filled with Grilled Halloumi, Guacamole, Smoked Bacon and Local Black Pudding.
