It’s wild garlic season! Join me to learn all about this deliciously pungent spring green and how to use it in the kitchen.
There is a beautiful, abundant patch of wild garlic at Mother of the Wood Retreat (where this class will be held) perfect for picking. We’ll start outside to harvest the garlic - learning how to identify wild garlic and how to harvest the leaves, buds, flowers and seeds and their different uses. After picking a giant basket of wild garlic we’ll head inside to wash our bounty and start cooking.
Together we’ll make a batch of wild garlic pesto - enough for everyone to take some home. Then we’ll make some wild garlic malfatti (an Italian ricotta dumpling flavoured with wild garlic) and a gorgeous, rich tomato sauce to go with the dumplings. We’ll also make a whipped wild garlic butter to be devoured with plenty of fresh bread. After the cooking we’ll all sit down together for a two-course dinner featuring everything we’ve made, plus a less garlicky dessert!
Recipes for everything we cook will be provided. Suitable for vegetarians and can be adapted for people following a gluten free diet. For other dietary requirements let us know when booking and we’ll do our best to accommodate if possible.
Ages 16+, under 18’s must be accompanied by an adult.
